LAGERS Lagers use bottom-fermenting yeasts that fall to the bottom of the vessel during fermentation. This is done at cooler temperatures, around 41-48°F, with maturation at or close to 32°F. The result is a clean, well-rounded beer from the yeasts working more slowly and thoroughly through the malt sugars.
AMERICAN ADJUNCT - Light bodied, pale, fizzy lagers made popular in America after prohibition. The use of adjunct cereal grains, like rice and corn is common. We put Light beer in this category.
